Perhaps no Indian dish inspires as much debate as biryani, especially when it comes to where it truly began. The dish travelled to the Indian subcontinent with the Mughals, where it evolved dramatically.

Today, biryani is less a single recipe than an entire family of dishes, each reflecting the history and tastes of the place that adopted it.
